Half Way To Saint Patrick’s Day Party

Thanks to everyone that helped make our halfway to St. Patrick’s Day such a success! Many hands made for a light load and a great time was had by all. We were fortunate even to get two of our favorite bands. Dan McCarville started us off and was followed by Odd Enough. There was a variety of dancing, including a few step dancers. Also thank you to everyone that attended and especially those that brought along new friends to join our group. One guest mentioned that the Guinness was the best they ever had!

The 50/50 Raffle Ticket Winner was Robert E Loughman of Battle Creek. Ticket No. 0871 for $297.00. Robert faithfully supports the club through ticket sales and it was wonderful that his efforts paid off!

Stage

Now showing at The Gem Theatre is "Say Goodnight Gracie: The life, laughter and love of George Burns." It's the best play Detroit has seen all year. Written by multiple Tony Award-winning playwright Rupert Holmes (also known for his song "If you like Pina Coladas"), "Say Goodnight Gracie" won the 2004 National Broadway Theatre award for best play.

Born Grace Ethel Cecile Rosalie Allen into a family of vaudeville entertainers, Allen was a talented dancer. Her grandfather, Patrick Darragh, came from Ireland, and together with her sisters, Grace performed Irish folk dances to the delight of audiences throughout California. She was educated at the Star of the Sea Convent School, where she excelled in the arts.

BroadwayOnstage has just opened a new run of Harvey, which is of particular interest to Irish people and those who are interested in Irish Culture.

 Recipes

Jamison Stuffed Steak

½ cup (1 stick) unsalted Irish butter

1 cup fresh white bread crumbs

Pinch of mixed fresh herbs such as parsley, tarragon and thyme

Salt and freshly ground pepper to taste

2 tablespoons Jamison’s Irish whiskey

Two 6-7 ounce boneless rib-eye steaks, butterflied

2 tablespoons extra virgin olive oil

1 large shallot, diced

2-3 large white mushrooms, quartered

2-3 Portobello or cremini mushrooms, sliced

In a small skillet over medium heat, melt 4 tablespoons of the butter. Stir in the bread crumbs, herbs, and pepper and cook for 2-3 minutes, or until the breadcrumbs have absorbed the butter. Stir in the whiskey. Season the steak inside and out with salt and pepper. Spread out half the stuffing mixture in the center of each steak, close the butterflied steaks, and press down on the meat to seal.

In a large skillet over medium high heat, heat the oil until hot, but not smoking. Cook the steak for 3-5 minutes on each side, or until seared. Transfer to a platter, cover with foil, and keep warm.

Return the skillet to medium heat, and melt the remaining 4 tablespoons of butter. Add the shallot and mushrooms and cook for 3-5 minutes, or until the vegetables are tender. Push them to the side of the pan and return the steaks to the center. Cook for an additional 3-5 minutes on each side for medium rare, or until the meat is cooked to your preference and the vegetables are browned.

To serve, put a steak in the center of each of 2 plates. Spoon the mushroom mixture and pan juices over the top.

Colcannon

3 cups finely shredded green cabbage

6 potatoes

Water

¼ cup milk

2 tbls butter

1 lb ham or bacon

1 onion, finely chopped

1 clove garlic finely chopped

¼ cup water

¼ cup milk

¼ cup butter

Salt and freshly ground pepper to taste

Place cabbage and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover and simmer about 8 minutes until tender. Do not overcook.

Boil potatoes until tender. Mash with ¼ cup of milk and 2 tablespoons butter.

Sauté garlic. Add to mashed potatoes.

Cook ham or bacon with onions. Drain any remaining grease.

Fold cabbage and ham or bacon into mashed potatoes. Add salt and pepper.

Form a well in the mashed potato mixture and add 2 tablespoons of melted butter.

Murphy’s & Bailey’s Cheesecake

Crumb Crust

1 cup crumbs from gingersnaps or Irish digestive biscuits (6-8 biscuits)

3 tablespoons unsalted butter, melted

Syrup

4 cups Murphy’s stout

2 cups dark brown sugar

Filling

One 8-ounce package cream cheese at room temperature

1 cup confectioner’s sugar

2 cups heavy (whipping) cream

¾ cups Bailey’s Irish Cream liqueur

One ¼ ounce envelope unflavored gelatin

1 cup boiling water

Fresh berries for garnish

Crust

Preheat the oven to 350ºF. In a small bowl, combine the crumbs and melted butter. Press the crumb mixture onto the bottom and up the sides of a 9-inch round spring form pan. Bake for 8-10 minutes, or until lightly browned. Remove from the oven and let cool on a wire rack.

Syrup

In a medium saucepan over medium heat, combine the stout and brown sugar. Gently bring to a boil, then reduce the heat to low and simmer for 8-10 minutes, or until the mixture is thick and syrupy and coats the back of a spoon. Remove from the heat and let cool.

Filling

In a large bowl, combine the cream cheese and confectioners sugar and beat until smooth with an electric mixer. Add the cream and beat for 3-4 minutes, or until smooth. Stir in half the Murphy’s syrup and all of the Baileys. In a small bowl, combine the gelatin and boiling water. Stir until the gelatin is completely dissolved, about 5 minutes. Stir 2 tablespoons of the syrup into the gelatin, and then stir the gelatin into the cram cheese mixture. Pour the filling over the biscuit crust. Refrigerate for 3-4 hours or until firm. Set aside the remaining syrup at room temperature.

When ready to serve, release the sides of the pan and cut the cheesecake into wedges.

Drizzle some of the remaining Murphy’s syrup around each slice and garnish with fresh herbs.
